Product Quality, Storage & Cooking

Q18. Is the meat shipped chilled or frozen?

All products are shipped vacuum-packed and rapid-frozen.

Q19. What is the best way to defrost Wagyu?

Slow thawing in the refrigerator for 10+ hours is ideal.

Q20. What are the storage periods?

- Refrigerated (unopened): 2 weeks
- Frozen: up to 1 year
- After thawing: consume as soon as possible

Q21. Which cuts do you recommend?

Recommended by purpose:
- Steak: Sirloin, Round
- Sukiyaki: Chuck Roll, Round
- Shabu-shabu: Chuck Roll, Round
- Yakiniku (BBQ): Short Rib (Karubi), Chuck Roll, Round

Q22. What is the best way to cook a Wagyu steak?

1. Bring to room temperature for 10–20 minutes after thawing.
2. Heat the pan on high and add a thin layer of oil.
3. Sear one side on high heat for 1 minute, then flip and cook 2–3 minutes on low heat.
- Sear the sides lightly if the cut is thick.
- Wagyu contains a lot of intramuscular fat—proper heating enhances flavor.
4. Rest the meat under foil for 2–3 minutes.
- This allows the juices to settle and keeps the steak tender and juicy.

Note:
Wagyu fat melts at a low temperature, so even if it looks slightly well-done on the outside, the texture will still be soft and rich when you eat it.

Q23. Does freezing reduce the quality?

Rapid freezing minimizes loss of flavor and moisture, so quality loss is kept to a minimum.

Q24. How is Manoa’s Hida Wagyu managed?

We work with certified farms and processing facilities that maintain strict hygiene, quality control, and full traceability from farm to processing.
